Method
- Cook the fettuccine until just al dente; reserve plenty of pasta water.
- Melt the butter gently in a wide pan.
- Add the pasta with a ladle of pasta water and the grated Parmigiano.
- Toss hard off the heat until silky and emulsified.
- Finish with black pepper and serve immediately.
