Method

  1. Cook the fettuccine until just al dente; reserve plenty of pasta water.
  2. Melt the butter gently in a wide pan.
  3. Add the pasta with a ladle of pasta water and the grated Parmigiano.
  4. Toss hard off the heat until silky and emulsified.
  5. Finish with black pepper and serve immediately.
